Spec deltas
Twenty dollars separates these two boxes, and 346 watt-hours separates them the other way. The RIVER 3 MAX PLUS is $359 with 858Wh inside; the DJI Power 500 is $379 with 512Wh (858 minus 512 = 346). The cheaper one is the bigger one, which usually ends a comparison before it starts.
It doesn't quite end this one, because the DJI is the better-built machine on the power side. It runs 1,000W continuous where the RIVER runs 600W, it weighs 16.1 lb against 20.8, and DJI rates its cells for 4,000 charge cycles to EcoFlow's 3,000. Three genuine wins, none of them marketing.
They just don't add up to 346 watt-hours. Run the DJI at its own headline 1,000W and the 435Wh you can actually pull out of it (85% of 512Wh) is gone in about half an hour, and both units can start the surge peak of every one of our six test loads anyway. Power was never the thing that was going to run out. Take the RIVER unless you're carrying it far enough that the weight registers.

The Power 500 is fixed at 512Wh, so buy the capacity you need on day one. Worth saying about the other side of this card, though: the MAX PLUS is the RIVER 3 Plus with EcoFlow's larger EB600 expansion battery already fitted, which is how it gets to 858Wh. That expansion port is mostly spent. Judge both boxes on what they hold today, and a fixed 512Wh is only a flaw if 512Wh isn't enough.
Two-to-one headroom, on the smaller inverter
The RIVER's 1,200W surge sits at twice its 600W continuous rating. The Power 500's 1,000W surge is exactly its continuous rating, so on paper it has no headroom at all. That ratio is a fair read on inverter design and an unfair read on capability, because the DJI's flat 1,000W is still the higher ceiling of the two. Ratio to the RIVER, absolute number to the DJI. What actually matters is whether your startup spike fits under the higher of those figures.
